Coconut palm nectar crystals are the evaporated sap of the coconut tree. Not quite raw, but still an excellent source of nutrition. Palm nectar is very similar to maple syrup except the nectar comes from the top of the palm tree and maple syrup comes from the bottom. A wonderful ingredient for confections and desserts with an added nutrient bonus. Coconut sugar naturally has a low Glycemic Index (GI), which has benefits for weight control and improving glucose and lipid levels in people with diabetes. Coconut palm sugars are rated as a GI 35. For comparison, Agave syrup has a GI 42, Honeys are GI 55 and Cane Sugars are GI 68. Unlike many products on the market, particularly from Thailand, our coconut sugar is made from pure dehydrated coconut sap with no added fillers like cane sugar or maltodextrin.
