can I use this for melases ? and how to use ?

I am assuming the by melases you mean molasses. I have not tried to measure the specific gravity (SG) of molasses but I suspect you will have trouble with pure molasses. The SG might be out of range and the dark color of molasses may make it hard to read. If the molasses is dissolved in water then yes you should be able to use the reflectometer. To use a refractometer first zero the refractometer using plan water close to the same temperature as what you are measuring. SG is dependent on temperature. Once zeroed dry the surface and put a couple of drops of what you want to measure on the refractometer and read the results. The refractometer is easier to read in bright light: sunlight or a flashlight.

can this be used for maple syrup

The scale on this refractometer tops out at 32 brix, but finished maple syrup needs to be at least 66 brix. So no, this can't be used to test finished maple syrup. It can be used to test the raw maple sap before boiling though.

I can't see the blue field when testing honey, only when using water for calibrating. With honey it gives a fuzzy blue space with no definition. Help?

At least you get a blue line. My can only be calibrated to water, and but with a liquid that has sugar it is just a blank white screen. Device is garbage.
