Which side of barazek to show off? The top side with a generous coat of sesame seeds or the surprise on the flip side studded with chunks of pistachios? Crisp edges, tender buttery crumb, a light honey syrup for the sesame seeds to stick to- what starts as a simple sweet may end up being one of the more sophisticated cookies in your repertoire. This is not your everyday cookie in the States but it probably is in the Middle East where it is a mainstay with tea or coffee. Barazek is thought to originate in Turkey or Arabic countries and as recipes travel over the centuries and across continents, kitchens and bakeries cultivate their own versions of barazek. It appears historically feasible that the southern Italian sesame seed cookie, Biscotti de Regina, is a close cousin.
