I chose the recipe for the Balsamic Vinegar cheese, followed the instructions (with the exception of the heating cycle - my microwave brought the milk to temperature in 8 minutes, not 13), and the "cheese" was ready for the refrigerator in record time. I must say that you could make the same thing without this kit, but the kit does make it so much simpler, and it gives you the recipe book besides (some look really yummy.). I left the cheese (compressed milk curds, really) in the frig overnight and we had it as part of our dinner. My husband REALLY liked it, the kiddo thought it was interesting, and I found it highly palatable. I will have to experiment with the flavours and ingredients until I find one that really appeals to everyone.
