Interesting concept, worth the investment.
This is a nice knife. I purchased from a kitchen store in Leavenworth WA. Basically, I paid a little more than I should have for supporting a local business owner in my hometown. That is neither here nor there. Let's talk about the knife. It's well made for an introductory level knife of Ken Onion's culinary knives. I am definitely getting my money's worth for the quality of blade that I purchased. As for function of this seemingly revolutionary knive:Peeling: It peels fruits and vegetables just fine. The surface area is adequate for the purpose of peeling apples, potatoes., and other foods. The surface area of the blade that is actually removing skins is about the same as an ordinary paring knife. That is 3 stars. The 4th star is for the reverse curve. This is where we learn about the true genius of this design. I'm not gouging out a quarter of my pear when my blade slips too far into the ripe fruit flesh. Instead, I cut a bit deeper into the skin yet retain much of the fruit.Coring: This is where the knife earns a solid fourth star. I can cut the seeds and core out of any fruit or veggie with surgical precision. The tip of the blade allows me to sculpt out apple cores and avacado stones without hacking into my fruit or blade.I'm sure that as my agility grows in using this knife I will only learn to love it more. The reason I can't give it 5 stars is because I just found out about the Rain series of this same blade. I would have spent more money on this knife for better steel, if I knew better. Admittedly, this was an impulse buy.
