THALYSIA GREEK THYME HONEY is a rare fragrant floral honey, its nectar collected by bees from mountainous, wild thyme bushes on Greek islands, highly prized in Greece since antiquity for its divine taste, subtle aroma and well documented health benefits. Aristotle himself considered thyme "excellent" and "golden in hue", the standard to which all other honey was compared to and he praised its wound healing, antibacterial properties. Bees collect its nectar mid June to early July from the indigenous wild-grown thyme bushes (Thymus-Θύμος) which grow on sunny, dry mountain sides of Crete and other islands of the Aegean sea.
