Nothing Exceptional
I bought this after reading an article on fermentation in the WSJ as a new twist on coffee marketing.Shipment was prompt and I received it in good order. I can't speak to the improved digestion claims, but the flavor is not exceptional and flavor is the most important factor for me. I drink my coffee black and I tried a coarse grind in a French Press and a finer grind in a drip coffee maker. It is a medium roast and tastes like a medium roast - O.K., but nothing special.If you like a medium roast, I find any quality Kona coffee is richer, more flavorful, less expensive and more readily available.

I'm glad I tried it
I brewed the coffee according to the bean/water ratio given on the back for Chemex. The result was a very light brew, with mellow, fruity notes. I'm glad I tried it!

and like to have a cup every day
I'm quite sensitive to coffee. Certain beans make me jittery, nearly every non-organic variety results in a mid-afternoon crash, and the acidity upsets my stomach. That said, I'm a coffee lover, and like to have a cup every day. The popular varieties in NY (Stumptown, Toby's, Blue Bottle) are too bitter for me, but gentler varieties (Whole Foods and other organic options) don't have a robust flavor. Finding Cultured Coffee felt like a gift from the coffee gods. It gives me a boost, but one that's sustained and gentle. It's flavorful and tastes like a proper cup of coffee, but at the same time goes down like a cup of tea, causing no stomach issues or shakes. Having one cup in the morning feels like just enough. I'm energized throughout the day and don't crash. In my opinion, the quality of these beans make the higher price very worth it. It's my new go-to!

Melllow but bland, and insanely expensive
My first reaction oh opening the box and seeing the small frosted bottles was, this is packaged for Dean & Deluca. On further examination I saw the description of how it was carefully roasted in Brooklyn. I am 5th or 6th generation Brooklyn, and the first to leave. My friends tell me it is different now, this is further proof, but... on to the coffee.I have reviewed a lot of coffee and coffee equipment on Amazon, and usually say that I am kind of a coffee fiend. It is time to stop minimalizing. I am made of coffee. I am also pretty fanatical about the coffee I brew, and how I grind it brew it, etc. I know that I am not alone here. My 3 star review takes the spectrum into account. There are people like my parents who drink coffee regularly, are OK with chock full 'o nuts, and the variety offered preground in pods, and who think Dunkin donuts cookie dough or whatever flavored coffee is great. Compared to preground supermarket coffee I would rate it 4 stars.and then, there are people who haunt forums on coffee geek, reading about the best single estate micro lots, where to find them, and the best small roasters overall. I fall into that second category. When I travel I routinely bring home coffee. My freezer is packed with the likes of Black cat intarsia espresso, and African varietals. I have Java estate, Ethiopian Moka Harrar, and Kenya AA on subscription here :)Compared to my daily brew I would rate it 2 stars.Because of the careful presentation, and the fact that the beans look like peaberry (another favorite and one which I have growing in my back yard) I was careful in the preparation. I disasembled and cleaned my burr grinder to make sure that there were no grinds left over from this morning's Java. I set if to a coarse grind and prepared it in a glass French press (I have 4. One is thermal). This preparation should assure the cleanest test, and elicit the best characteristics of the coffee).When I poured the water over it, it looked very nice, had a frothy top,, resembling well prepared espresso a bit. I let it steep a few minutes, and then tried it, first black, and the with some cream.It is mellow and smooth as described,, but it is also very weak (light roast) and not very distinctive. It reminds me a bit of Kona (which I personally dislike, quite a lot) but has a bit of a bitter aftertaste. In a word, I was not impressed, do not like it, and probably won't finish the tiny jar. It is not as good as any of the coffees s in my freezer, or the large box Amazon just delivered. Compared to my stash of coffees, I would rate it a 1 or 2 stars.That is how I arrived at my 3 star rating for taste. If you buy coffee in the supermarket you might think it is good, If you buy microlots or single estate coffees, don't bother.I started with a 3 star rating, but taking price into account had to drop it. $90/ lb should get you exquisite coffee. You can get some of the best coffees for a fraction that price.They discuss the number of servings, and beans, but not the origin, very odd for coffee in this price range. Was it grown in Brooklyn? (I grew blueberries and corn there, between mom's hedges. Coffee, I think, needs a bit more heat.)In sum:2-3 stars for taste (see my overly verbose description)1 star for value5 stars for presentation (Did Apple bottle this coffee?)So that I can offer something of value to those who like light roast coffee, and who seek out Hawaiian coffee, buy Kauai or Molokai coffee. It is better than the Kona ;)Personally I prefer African, but to each their own.
