Just open the testing chamber, pour in a bunch of beans, screw down the lid, then turn it on and press the Test button. The included instructions are mostly pretty good, but can be a bit difficult to interpret for someone new to the field. One caveat: you will have to screw down the lid harder than you would think necessary in order to get the metal button to rise to flush with the plastic cap (per instructions). The button plunger is kind of stiff. Also, customer support was responsive and proactive. I emailed a question about operating, they responded within a few days with an offer to replace anything that was not right. Fortunately my question was simple, no replacements necessary, my tester is still working just fine. My neighbor across the road (who wrote a very nice book about small scale cacao production) is now totally jealous.
