Chart on pages 160-165 worth the cost of the book
I am relatively new to dehydrating foods and after experimenting on my own I realized I needed direction. I am not a hiker or camper. I am not a survivalist. I have never been interested in canning my own food. But I hated to see my surplus foods go to waste. I often would buy large amounts of in season produce and struggle to "turn it into something" before it began to rot on my kitchen counter. I live in an area where getting local apples, cases of bananas and large amounts of garden ready vegetables were economical and quality was better than what the grocery stores could provide. I decided to study up on dehydrating. I watched YouTube videos, borrowed books from the library and quizzed my friends who owned dehydrators. After purchasing my dehydrator I found Dried and True. Looking at the reviews, paging through the posted pages on Amazon nudged me into the decision that it would be a good investment. When it arrived I was impressed by the format, recipes, easy readability and step by step recipes. But the absolute winning section of the book is at the very back. The author included a Dehydration Chart for Common Foods. The chart covers 6 pages and lays out in alphabetical order how to prep, the drying time, the temperature to set your dehydrator, doneness cues, optional suggestions and storage. Honestly this chart was exactly what I was looking for because as a new student to dehydrating I was unsure of what the final product would look like and if it was "done". This takes all the guesswork out of my practicing and added some confidence to my attempts at the basics. The recipes look wonderful because the author chose foods that included strong flavors. The ideas are fun and will wow your guests much more than offering them the usual dried apple ring.

A lot of and unique must-try recipes not seen elsewhere
This book gives you plenty of ideas on what you can put in your food dehydrator. Unlike a lot of food dehydrator books, this one gives you recipes on what you can do with all of that dried food you’ll have after reading this book.I have been dehydrating foods for over 30 years. Anytime I find a new book on the subject, I’ll pick up a copy hoping it will give me some new ideas of things to try. This book did not disappoint. One recipe I especially want to try is the dehydrated and powdered kimchi. Another recipe is dehydrated citrus zest.► TOP 3 THINGS I LIKED♦ The recipes used ingredients that I can easily find at one of my local grocery stores, nothing too obscure♦ The book is well organized and has recipes for dehydrating meats, veggies, fruits, and it even has a section for other foods♦ The author notes those other helpful kitchen tools that you will need if you don’t have a lot of dehydrator experience► RATING OF KEY FEATURES♦ Recipes were well laid out, I didn’t note any missing text or steps♦The book had a hyperlinked table of contents, which also included page numbers. The page numbers are also hyperlinked, but don’t really add much to the Kindle version.♦ The book had a hyperlinked recipe index. The recipe index referenced page numbers, which are of little use to a kindle device♦ The book offers high resolution bright color images when expanded and zoomed. I didn’t see any of those grainy low resolution images that look crappy when you zoom in for a better look.► ANY SPECIAL FEATURES♦ Any temperatures or provided in both Fahrenheit and Celsius, weight and volume measurements are in pounds, cups, and grams.► SUMMARYThe book gives a lot of variety and inspirational ideas on food dehydration, and even a few unique recipes that I have not seen elsewhere. Scroll back up and take a look at the <i>Table of Contents</i>. If you own a food dehydrator, or interested in getting one, then this is one of the books you should pick up and add to your cookbook collection. This book will give you ideas of foods you can dehydrate that I have not seen in other food dehydrator books that I own.

I love this book-- it is SO beautifully written/photographed
I love this book-- it is SO beautifully written/photographed! I've recommended this to at least a dozen friends-- mostly because they come over and spot it on my counter straight away. Also, the recipes really stand out from most I've seen in dehydrating books; they're very interesting flavor combinations and I love them. It gives me a ton more ideas and has helped me literally save my garden as it grows faster than I can eat fresh.

Absolute best darn cookbook out there
Where to begin this cookbook is one of the best out there. When I got my dehydrator, I had no experience and didn't know what I was doing. Not only did this cookbook walk me through the basics of familiarizing myself with dehydrating, but gave me fantastic and easy but also incredibly flavorful recipes along the way. This is not the kind of stuff you can just find online- front to back this book will be your right hand while learning how to dehydrate with recipes and also experimentation.

She sat down and read it from cover to cover (which is not like her at all)
I bought this for my mom, who just got a new dehydrator. She sat down and read it from cover to cover (which is not like her at all). She said she learned a lot about dehydrating and was fascinated by all the recipes. She likes that they're unique, but still something she will use. Sometimes recipes can get a little too fancy with ingredients or be too involved. This book is the perfect combination of unique and practical.

Not for us
We have a dehydrator for plant based things and this book is mostly meat recipes. We tried the citrus recipes and they were gross to us lol so we're giving the book away. The flavors just don't work well together.

Superb resource!
I bought this when I read something in the introduction that would help me! Opening further gave me lots and lots of easy to make yummies. Clear instructions! Better than any other book on dehydrating that I have and I am a commercial food processor!

Only a few pages are really useful
I was looking for something which would really advance my capacity to use my dehydrator. The pages with tables of how long to dry certain foods at what heat are useful, but too much of the book is taken up with recipes for things I'd never make. More of a recipe book than a manual.

Not for me
Too many fancy ingredients, would have liked to have seen more pictures and store cupboard ingredients. Less of the pretentious stuff and more of what people would use it for in everyday life.
