Then they need a cold rinse, and if you want them to taste like they do in the shops, they need to soak in a syrup for a while, otherwise they’ll be flavorless. Getting cold gives them their trademark chewiness, so the longer they soak in the syrup, the better. I found a recipe for brown sugar syrup (just equal parts brown sugar and water, simmered until reduced) and I added a teaspoon of vanilla and a tablespoon of molasses to mine. DIVINE. Dump your rinsed pearls into this syrup and let soak for at least 2-3 hours.
