The Organic Extra Virgin Olive Oil from Rhyton is produced from the Koroneiki variety of olive trees recognized globally as one of the preferred varieties of olives due to their high levels of poly-phenols and natural antioxidants, and have been grown in Greece for more than 3,000 years. The olives produce a delicate, well balanced olive oil, with a good level of fruit and a gentle pepper spike at the end, and was a UK Guild of Fine Foods Annual International taste award winner 2013. Rhyton works exclusively with local family producers of olive oil on the Greek island of Crete who respect and maintain the long lasting tradition of using only sustainable farming methods without the use of fertilizers, bait sprays and herbicides, and rely only on natural rainwater (dry-land farming). As illustrated by the artist Alexis Marcou on the label, the olives are picked by hand threshing the trees with flexible sticks, and are within hours ground at a neighboring mill exclusively by cold method (below 27C) preserving the poly-phenols and other antioxidants with 198 ppm of poly-phenols.
