## Description

Pressure canning is the only method recommended safe by the U.S. Department of Agriculture for low-acid foods. Doubles as a boiling water canner for preserving fruits, jams, jellies, pickles and salsa in pint and half pint jars. Also handy as a large capacity pressure cooker. Constructed of warp-resistant, heavy-gauge aluminum for fast, even heating. Works on regular and smooth-top ranges. Deluxe pressure dial gauge registers the complete range of processing pressures. This precise measurement is especially important at higher altitudes. Air vent/cover lock allows pressure to build up only when the cover is closed properly and prevents the cover from opening until pressure is safely reduced. 23-Quart liquid capacity (21.8 liters).

Review: Superb quality! - I grew up watching my mom pressure can, and never thought then that one day I too would enjoy this self sustaining hobby! I quickly became addicted! I researched pressure canners for a year before finally settling on this Presto Model. I actually purchased the 16 quart first, and then loved it so much, I purchased this 23 quart. I have a flat stove top, so also confirmed with the manufacturer of the range that i could safely use a pressure canner. The last thing i wanted was a cracked surface. It works like a charm! Several great points - My moms pressure canner (from the 'old days', and even today) rattles and shakes, and I never felt safe even being in the same room while it was on the stovetop. This one - honestly its so quiet, i have to force myself to remain in the kitchen because its possible to forget its even on the stove! Super quiet, no rattling, shaking. For my range, once I am at my required pressure of 10-15 pounds, I drop my burner temperature to 2.8 and that maintains the pressure for the required time. The only sound it makes, is if I overfill the canner with water, and some of the steam bleeds off, and leaks down to the burner. But this doesn't last long, a few minutes at most. This canner is also easy to clean. It is heavy, BUT i have also seen lighter canners, and I have questioned how sturdy they are. This one fits in my sink for washing. I canned ALOT the first year, and needed a new seal, and ordered them directly from Presto. Seals were reasonably priced as well. I add a tablespoon of white vinegar to the water each time i use it, as it will stain the inside over time. I have safely pressure canned meat, including beef, and chicken, as well as soups, veggies and fruit. It also doubles as a water bath canner too. Highly recommend! Comes with a great instructional book for introductory canning, which i use exclusively for all my recipes.
