As it says in the instructions, the angle on the sharpener isn't suitable for fine German and Japanese knives, so I didn't even atempt.I beieve I will leave those to a professional! I sharpened about 10 long kitchen knives that needed a lot of work. When I was done there was actually a pile of shavings on the far side of the sharpener. It worked a lot better than any other commercial sharpener I have used. I dont have any ceramic knives, so I taped that slot off so I wouldn't confuse them. Review: Great Purchase - Great right out of the box. Sits on the table or bench nicely and the rubber pads keep it in place. Good price for a quality tool. Follow the instructions: Don't press the knife into the sharpener, just guide it gently. Worked well on a dull blade and is keeping my pocket piece very sharp. Haven't used the ceramic sharpener yet, but have no doubt that it will work just fine.
