What do I have to do before making ice cream?

Freeze the bowl. The 8-12 servings double-insulated bowl needs roughly 24 hours in the freezer before the churn, so the standing habit is a bowl living in the freezer between batches.

How long until the ice cream is ready?

Once churning starts, it takes about 20 mins. to make ice cream. Set the timer. Once finished, the churn shuts off on its own. Straight off the paddle the texture is soft. Transfer to a freezer-safe airtight container and freeze for a firmer scoop.

How does cleanup work?

Bowl, lid, and paddle rinse by hand, the LCD panel and stainless housing wipe down, and the bowl returns to the freezer for the next run.

Who is this machine best for?

Cooks who want the machine managing the clock. Want the same capacity with no electronics? The ICE-30. Starting out? The ICE-21. Want no pre-frozen bowl in the workflow at all? The compressor ICE-100 runs batch after batch on demand.

Why a churning machine instead of a no-churn gadget?

Programmed churning splits the difference between hands-on and hands-off: classic folded-air texture, with electronics minding the minutes a manual churn asks the cook to mind.
