Yes it opens in one version of the instructions. Even has a little stove, bed, and writing area.

Q: It looks like a great set, but it comes with only a boy. Why not a girl?

You can go at any LEGO store and configure your own figure(s), like 3 for $9.99. You can build as many as you wish, whatever you wish and have a figure that you think you'll like with this set. If you like the set the fact LEGO put a boy figure only shouldn't prevent you for enjoying the whole set.

Q: if 2 adults were to try and build this what time frame could it be done in? thinking of useing this building set in a relay race

It is not very complicated, so no more than 20 minutes. Most of the pieces are accessories (mugs, fishing poles, etc.) for camping.
