What are the differences between the two product styles? (as they are priced differently too)

According to HP website, TE01-1022 comes with a 180W Power Supply.  The TE01-1020 Comes with a 400W Power Supply.  If you plan to add a dedicated graphics card, the 180w 1022 will probably have a hard time supporting it.

Only other difference I see in the two models is that the 1022 comes with two 8G Sticks of Ram (need to buy 2 @ 16 to go to motherboard max capacity of 32G), and the 1020 comes with one 16G stick of Ram (only need to buy 1 @ 16 to go to motherboard mac of 32G)

Lastly, there might be a difference is Mouse/Keyboard combo.  I haven't received mine yet so I don't know for sure, but I think to 1022 comes with wired keyboard and mouse, the 1020 comes with wireless.

Does the $859.99 price include intel uhd graphic 630 card? it indicates it is included but next to the price it shows a higher price with it included

The lower price option is for the HP TE01-1022.  The higher priced option showing the 630 card is actually the HP TE01-1020.  Both have the same integrated graphics card.  The Third and highest cost option is the TE01-1050(I think) and it includes a dedicated graphics card.  There are some other differences between the 1020 and 1022.

Does this support displayport alternate mode (usb-c to hdmi)? if not, what low power graphics card will give me a second hdmi out?

You can use via to hdmi cable. Any graphics card with hdmi will give you second hdmi, but this pc has very low power so I am sure you can install

Is there an ethernet port and will my 1 gig download speed work without using any adapters?

it comes with a gigabit Ethernet port. can't say if your network will actually handle a gigabit download speed
