The product is of excellent quality. It comes fairly close in flavor to the "real" guanciale of Italy (which gets five stars).Service (shipped by Taylor Markets) was very slow. The product arrived four days after the guaranteed latest date.

Smells like greasy shoes, tastes like heaven
The entire reason I even heard of guanciale let alone pay so much for it is because of spaghetti carbonara. I've had American carbonara and even Japanese carbonara, but prepared in the traditional Italian method, it's uncanny.Before going on to the actual product, there are some things you'll need to know. First of all, there is a lot of it. The picture is basically what I got, four medium to large jowls.You'll probably need to cut each of them in half, wrap generously, and put in freezer bags (vacuum-sealed would be best). Finally, this stuff is very very oily and smells (goes when cooked, don't worry). It took a while to receive it because of the separate processing time (noted in the product description), but when it did ship it got to me in a day. It comes packaged very nicely in insulated bubble wrap and plenty of ice packs.Guanciale is similar to pancetta but has a much bolder taste. You can put a pretty good crisp on it and it will still be tender in the middle which is part of what separates it from all other bacon. It'll be the star of anything you put it in. Now if you don't want to pay so much, I suggest getting just regular pork jowl from Whole Foods. There's is almost as good as this and ten times cheaper per pound. No other grocery store pork jowl is anywhere near as good as that and (especially) this.

If you know what this is, it's fantastic
I hope you are going to make some VERY large receipt of something because this a HUGE amount of guanciale.It is really first quality but doesn't keep well in the freezer without vacuum packing it in smaller pieces.I made corn with grilled, chopped jowl and it was fantastic.Next batch was weak as the guanciale was freezer burned (my fault as I didn't use the vacuum packer).

Never Disappointed!
I love this product and the purveyor is a great source for buying in bulk and cutting out the middle man. I have ordered this product several times and have never once been disappointed.I open up and freeze each one separately for future use.

Outstanding Product
The package arrived on time in great condition. We divided into the amount we needed for our spaghetti carbonara recipe, sealed each portion with a food sealer, and froze them. Using guanciale makes such a difference in the final dish. Highly recommended.

Perfect for so many things
A classic Pasta Amatriciana requires this beautiful and mild form of bacon, and as with every other product I have purchased from them, La Quercia has nailed Guanciale.A little guanciale, rendered a bit but still tender, some diced tomatoes, a little peccorino romano, a pinch of crushed red pepper, and you are done. The guanciale is the star, and this guanciale really stands up. Served with bucatini pasta, and you might as well be in Rome.
