How does this holder lock?

There are small holes in the latches to allow you to place a TSA style lock through the latch to lock the carrier.

Can this be mounted vertically??

Yes. I'm sure it "could be" but not sure why you'd want to do it that way. The gerry cans are heavy once they are filled. The weight of the TWO gerry cans will be sitting on a ledge of about 1 1/2" when it is in a vertical position. It is not designed to be put in a vertical position. The strength comes from the tray not from the ledge around the tray. If you need it in a vertical position you will want to modify (AKA Weld) and add a bracket to the bottom with side brackets to hold the extra weight.

Is there a way to mount it to a prinsu roof rack?

There are pre-drilled holes in the bottom. I'm sure tou can very easily drill holes where needed to mount on any flat surface. I'm even more sure that you could drill the holes in between where the 2 cans are and mount a U-shaped bracket around a roof rack. Having said that, I do not personally know your roof rack and I would prefer to have 2 mounting points on a flat surface. This is holding gas cans...

Will this work with the plastic Jerry cans. The ones that are the nato type

This holder will only work with tanks and cans that are 20l / 5.3 gallon NATO/Wedco style military cans.
