I'm a big fan of this mandoline
When I tossed the first mandoline I bought into a bag destined for the Good Will, I swore I'd never waste my money on another one. Still, I'll admit, I've been tempted by those uber-expensive models they sell in the mall stores but not willing to take the chance. I don't remember how I ran across this one, but I'm so glad I did. As a vegetarian, I do a lot of chopping, dicing, and slicing. This little treasure has sped up my process and yielded more consistent results despite the fact I thought I'd developed pretty good knife skills over the years.Its main limitation is the maximum thickness of anything you want to cut up. With that limitation, however, you can achieve several thicknesses of slices and every where from a very fine to a fairly coarse dice. The coarse dice requires a different technique, but there are many demos on YouTube that will teach you how to achieve that result and many more uses for this mandoline.I will admit, I haven't had much luck using it in the proper way for carrots, celery, or radishes. You need to stick them in the holder, and they wobble and fall out. I just can't get that to work. I have developed a different way for carrots and celery that works well, but it requires being extremely careful. I hold a stick or two on top of the mandoline and push it back and forth across the blade until I get close to the end. That works very well. You probably shouldn't try it without safety gloves, if at all, but it does work and gives that great uniformity that makes for more even cooking.Ease of cleaning is an important consideration, and this one is designed to be cleaned easily. Maybe not as easy as it looks in those YouTubes, but easy. Mostly you need to rinse it off before food dries on it and check the "V" part of the blade to make sure nothing got stuck there as can happen with softer foods with skins. Compared with the nightmare of my first mandoline, that is a minor consideration.I realized how happy I was with this mandoline when I started to grab it for single-use tasks, like slicing an onion to put on a veggie burger. Hope my review helps you decide where this equipment might be what you are looking for.

If a kitchen tool can be loved, I love this one! With an optional oval-shaped plastic bowl, it is the salad-maker supreme - not just effective and speedy but exhilarating to use. The bold red color helps, but performance is what I’m talking about.Convenience is great too. This design combines the advantages of on-board and separate housing of tools by having the tool case attach to the underside of the body. Then everything just fits in the bowl.True, this unit can’t manage crinkle or waffle cuts because the V-blade isn’t interchangeable, but I didn’t mind buying another small Borner mandoline for that special purpose - not expensive and really just as convenient as changing blades.Strange to say, my main machine has a production flaw. Molded-in graphics indicate that the thick-slicing julienne blade can make square dices. Unlike the thin-slicing julienne blade, however, the thick-slicer won’t adjust to the indicated dicing position (so, no dice!). I have heard of Borner introducing an updated model that won’t disappoint in that way but still have all the old virtues. Mine is from 2013.Oh, well. Lots of little machines can dice vegetables!UPDATE: How amazing! - after four years of thinking that my large-julienne cutter wouldn’t and couldn’t make diced vegetables, I have stumbled on how to make it work. In case anyone else needs help, here’s how: you know that you want to move the julienne assembly upward and inward toward the V-blades, according to the molded index point for dicing. But you must start (counter-intuitively) by pushing firmly DOWNWARD on its opposite end (nearest the handle, farthest from the blades); this allows a small, hidden plastic pin to move down and underneath a barrier and onto a plastic ramp that guides the whole assembly exactly to where it needs to go. What results is the promised dicing action.

Stick with the V-1001, a superior product due it's simplicity!
I love V slicers. I have been using the basic (V-1001) Borner white slicer for many years and was due for another replacement, as the plastic was falling apart after almost daily use for over 5 years. This time, I thought I'd upgrade to this model, to give it a try. I have learned that you can't always improve on a good thing. This unit works on the same concept as the original, but changed a few things.First, the inserts for making small and large strips are the same as previous models, which you slip and and away you go. The straight slicer, however, has changed. Before you had one insert, and inserting it one way provided very thin slices, and flip it over, and you get thicker slices. This model, you slip it in one way, and there is a button on the side of the unit that you push and adjust the depth where insert sits, thus adjusting the slice thickness accordingly. It sounds god on paper, since now you have more options for thickness. The problem is the button mechanism is hard to work, frustrating to set, and when struggling with it, there is a real danger that you'll slice your finger. Once the slicer is set up, you need to make practice slices to see how they come out and then adjust. The V-1001, you know what your getting before you start. I find it very difficult to use and takes up more time than it's worth.The V-1001 is quick, easy to use, set-up and clean. ThisV-7000 is hard to set-up, is not consistent, hard to pack back up again. (and is more expensive). It is also larger, which makes it somewhat more difficult to store.

A lot of hype
This is supposed to be the magic machine; I bought it to do an angel hair thin cabbage cut, that is not happening, the thinnest setting is still way to course. It absolutely will not cut cassava(yucca), it is dangerous to even try, fry cut sweet potatoes forget it, the yam binds in the blade and the keeper pulls right thru the yam and it goes nowhere(yes the yam is as small as the slide) The setting to dice onions does work well. Not sure if the blades are dull, but the thinness setting is definitely not fine enough. We had a cook come in while staying in Jamaica that had a mandolin for the slaw, it was amazing, I will have to get that type. If you are looking for fine cuts, this will not work, more comparison shopping will be required.

Love it
Been wanting to buy one for a long time. As soon as the price was reasonable i did. This stores away nicely since everything clips into place. the blades are quite sharp, i’ve been getting really thin cuts. Nothing to dislike really. The holder is very good. Always us the holder.

Very Easy and Quick with Super Sharp Blades!!! Love using it..
After trying my hands at quite a few mandolines and slicer in the market and being disappointed with it, I finally zeroed on to Swissmar Borner after a lot of research and googling. Initially I had apprehensions buying it considering its high price, but after reading a lot of reviews I decided to buy this. I have been using this for regularly about a month now and I am very happy with my decision and purchase.I have recently got into salad making, and this has made life really easy and fast. For a food enthusiast or someone who has lot of cutting and slicing to do, I think it is a good addition to their kitchen.Pros- Its sharp, simple and easy to use and with safe storage. Expedites the cutting and chopping work – for both everyday cooking and elaborate cooking for occasions.- I have used this on variety of vegetables – both hard (potatoes, beets & yam) and soft ones (tomatoes, strawberries, bananas), it works perfectly good with both the textures. I could slice, julienne and cube the vegetables with desired thickness.- Adjusting the thickness and Changing blade is very simple and convenient.Cons- It’s very sharp, if you don’t respect it you will soon know what you will end up with :).- It's definitely Pricey- Though it does a great job, I do wish that it had a larger cubing blade and a larger fry blade- Small amount of waste as u cannot slice until the end of the vegetable. However if u use the hand guard, u can avoid it to an extent (I use my knife to prepare those last pieces and thus have zero waste.)

Newer model not necessarily better
I purchased the Börner V-7000RD VPower V-Slicer because I assumed it would be as well made as the Börner V Slicer I purchased 15 years ago. The changes made to the older model were not improvements. The abs plastic used is of cheaper quality and slippery, especially when it is wet. The non-slip-feet? Not so non-slip.My first V slicer came with a stand that would contain the 2 blade inserts as well as the slicer in an upright position. The blade inserts that were not being used could be contained in an upright position in the holder, therefore taking up less counter space. The newer model has an insert "safety holder" which holds the blades and attaches to the rear of the V Slicer in order to stand in the upright position for storage. The safety holder is fastidious to attach to the slicer before storing it and when the V Slicer is in use the insert holder must be laid down somewhere because it won't stand up unless it is attached to the slicer.Being able to adjust the blade inserts to adjust the thickness of your food is a good idea but awkward as you must be very precise in holding the unlock button while re positioning the blade insert. Not as easy to do as the video suggests. Being able to adjust the flat blade insert flush with the blade is a good safety feature.Also DO NOT purchase from 3rd party sellers. I paid $28. to return this item to Kitchen Niche.Update: After 2 weeks of contacts with Amazon I only received a partial refund.

Top notch kitchen slicer
Light weight but still sturdy. Most V slicers have a problem with the tip of the V being pushed down as you run whatever your slicing down over it. Not this device, it maintains the same cutting depth even when pushing fairly hard.Being able to stow the extra dicing blades inside a holder which then attaches to the bottom of the device is also a great idea as the blades are inside a sheath and not exposed allowing the VERY sharp blades to encounter wayward fingers while pulling it out of a cupboard.Even better was that it was on sale for Black Friday making it an even better buy. That good German engineering, worth buying
