I'm a chef and I bought this knife for the size and for using it to filet fish, but I have also used it to break down chicken and it works beautifully. Wicked sharp out of the box, and I still haven't had to sharpen it. I'm 6'5" and I'm a big guy in the kitchen and I like to have big knives in my knife bag. Awesome tool.

It is a very heavy blade and the spine is thick around 8mm. It came sharp already. Tried on some 15 lbs salmon's bones, you can just let the blade's weight does its job, and no chipping.
