The panettone is famous the world over as a delectable soft moreish bready Christmas cake. But try and find a panettone in Spring and you may well be disappointed. Thankfully, Easter has its very own version, the Colomba di Pasqua (“Easter Dove”). A colomba is very similar to a panettone (a sweet bread loaf often studded with candied peel) but has a distinctive dove shape. The Flamigni brothers Armando, Lieto & Aurelio opened their first pastry shop in Forli in 1930. Today the company produces exceptional colombe, torrone, panettoni and pandori with the same focus on quality ingredients and traditional techniques.
