this is a staple in our house
My bae is vegetarian and I have learned how to cook more vegetarian dishes. A lot of curry pastes have shrimp paste, fish sauce, squid sauce ETC. which he does not eat. This curry is perfect for us. I cut up veggies like potatoes, onion, turnip, daikon radish, bell pepper, Thai chilies, karot, mushrooms, broccoli, basil leaves, you can pick and choose, or add others. I put a generous blob of curry paste in a large large pot, and turn on the heat. I kind of spread the curry paste around until it smells very fragarant and parts of it start looking dry, I heard this "opens up the flavors". Im not a great cook, I just watch a lot of cooking youtubes. Once the paste is looking a little dry, I add coconut milk. I stir well until combined and not lumpy. Then I add my vegetables in rounds, starting with the hard root veggies and leaving leafy greens or tender veggies till the last 5 minutes. If the sauce is not flavorful enough, I add more curry paste and stir it in. I also add water or more coconut milk if needed, then I like to boil it down until the potatoes are cooked through. Taste the sauce as soon as the root veggies are in, may need more salt. I salt the sauce so that the potatoes and roots get seasoned as they cook. I serve it alone or with rice. Enjoy.

My wife and I liked it. We just eyeballed how much to put in with our "use up what's in the fridge" recipe. My wife is a bit of a spicy lightweight but was able to handle it fine. I did not use any additional salt/soy sauce/fish sauce in my recipe, and did not find it to be to salty, but the salt level was up there. Admittedly though I have been eating a lot of salty snacks lately and my tolerance levels may be up. My wife didn't think it was overly salty either. We used it with pork, vegetables, and coconut milk over rice. I give it 4 stars as it didn't blow my doors off, but it was a pretty solid green curry paste. I'd use it again. I do make my own on occasion as well, if I have the time.As for expiration date issues noted by others, mine was fine, not expiring for another year.

Best curry paste-- but spicy!
This is the absolute best curry paste! I love spicy food and this is definitely spicy so beware. I just stir fry some cubed meat (chicken, beef or pork) with onions, add a few spoonfuls or the curry paste and a can of coconut milk, let it simmer for 20 minutes, then add crunchy veggies (broccoli, cauliflower, carrots) for 2-3 minutes and voila!

Restaurant taste at home.
Someone online mentioned this product so I ordered it and am not disappointed. I can now make green curry that tastes almost exactly like what I get at the local restaurant and it's crazy cheap. It's a little too spicy for my family but they are admittedly lightweights when it comes to spicy heat. If you or your loved ones don't like heat you're going to be spending a lot of time adjusting your curry trying to dial down the spiciness, some methods work better than others and don't dilute the taste.Or don't dial it down and eat all the curry yourself while cackling in glee. Just don't aspirate on your curry from laughing at them while you eat.

Near Restaurant Quality Green Curry
Wow! This is so much better than the Thai branded green curry I can get at my local grocery. Followed the proportions pretty closely to what the jar suggests except used a lot more veggies and maybe a bit more curry paste. Turned out great - very close to what I'd expect at a quality Thai restaurant. My prep was a little too spicy for the least spice-inspired member of the family but our youngest loved the heat. This jar is huge so it will last a while but this will definitely become a repeat purchase.

Love This Stuff
I mostly use this for a green chicken curry. I use about double what the recipe calls for. I warm the cream off the coconut milk and add the paste and mix with a wooden spoon till it's smooth and smelling wonderful. Then, I add the rest of the coconut milk an so on... For the whole thing, my burner stays low. Nothing boils. If it gets too hot, the paste will separate. Not a catastrophe. It just tastes better if you don't.

So delicious!
I use this almost weekly. I was spending a fortune on green curry at my Thai restaurant and this is seriously just as good! Easy directions on the back. I shred some rotisserie chicken, lightly fry vegetables in coconut oil, add coconut milk and a few teaspoons of the curry and voila!

Fairly salty as others have noted. I think if you have absolutely no other salt in the recipe it might be OK, I have only tried it once and the rice I used had been cooked with broth so overall my GF felt it was too salty but need a bit more sweet. I was OK with it. It was my first try and I combined a couple of recipes so it will definitely get some tweaking next time. Heat was about as expected, I used ~50 grams as they specified and it came out to what would be a 2 at my local restaurant that uses a scale of 1-5. I "loosely" followed this recipie- http://www.thaitable.com/thai/recipe/green-curry-with-chickenAs far as dates, I got it in 1-20-2016, manufactured 1-30-2015, EXP 1-30-2017.

Fiesty and tasty
Excellent taste, better than what I got from most thai outlets. The only minor gripe I have is that I normally have to use 40g of product for two portions (i.e. 350g of chicken), because otherwise it gives an extremely hot flavour to my meal. I also need to put extra coconut milk, which makes the sauce flavour more bland.I still need to find a way to get the perfect balance between sauce thickness and bearable hotness. For the record, I like hot food but my tolerance is usually around "medium" values.

This is much better.
You can keep your pale gloopy imitations from the UK supermarkets. This makes a really tasty green Thai curry and I'm never without a pot. Finding it so cheap on Amazon has been a bonus as the only place I could get it was a health food store. This is much better.I don't keep it the fridge and it has been fine. I snip one corner and fill a lidded jar, reseal the bag with a Lakeland clip and store it at the back of a low cupboard. A small amount, say 1/4 tsp per person gives a lovely spicy edge to all sorts of dishes, especially stir fries and soups, without actually turning them into a curry. A decent amount for a Thai curry is of couse, beautiful.

Perfect blend of heat and spice.
Love, love, love this product. Living in France, where the only kind of hot spice available is something suitable for a 2 year old, I was desperate for something like this. I have to say this wonderful paste did not disappoint. It has a heat that is perfect to pack a punch, but not overwhelm the other Thai flavours. I would highly recommend.

Must Try!
This is delicious. Packed full of flavour. Hot without verging on obnoxious heat that begins to taint flavour. Night and day compared to the stuff you get in supermarkets. Makes the most stunning fatty pork soup perfect for winter!!

Decent green curry, a bit expensive.
Strong salty flavour, need to follow instruction closely. Not keen on packaging, needs to cut internal plastic sealed bag , prefers it to be just in the pot, cut down on plastics.

Great authentic tasting paste
I bought this as I love an authentic tasting Thai curry and many shops now stock watered down pastes. This paste is fantastic and I will definitely buy again.

Best Thai Curry Paste
Great, can't get in Tesco any more and the replacement there was awful. Now we have found it here we will be regular purchasers!

Tasty, authentic curry paste
I was so pleased to find this curry paste online. We used to buy this from our local Chinese supermarket but we have moved and there are no Chinese supermarkets where we are now and it's too far to trek back just for this. This surpasses anything available in the normal supermarkets. Much better all round flavour and depth. Wonderful taste. Their red and yellow are also very good.

OK
Good, but the gigantic tub was totally impractical when using the odd teaspoon here and there. It would have taken years for me to use it all up, so I gave it away.
