We usually share a steak, so, I fixed it with homemade roadhouse seasoning in a hot skillet with great olive oil and a pat of butter. 4 min. on side one, then 2 min. on side 2. Came out nicely crusted, rested for a few minutes, then served. After discussing which half each of us wanted, we made our selections. Turned out perfectly. Done to a nice medium. Served with fresh Caesar Salad with homemade Caesar Dressing and a big pot of herbed, buttered mashed potatoes. Tender, buttery texture, not thin, nice size, tasted exactly like an excellent New York Strip should. We will be getting these again. I needn't have worried about this purchase. Great in every way.
