I decided to try SAVOIE'S Old Fashioned Dark Roux this time I made Gumbo. I cooked up 12 Quarts of Gumbo and used the entire 16 oz jar - and it was perfect. After frying up my Andouille sausage, I fried the Holy Quartet (I add carrots) and then softened the Roux in the cast iron skillet. The Wine and beef stock stirred into the Roux perfectly - no clotting and actually better than my homemade Roux. Using SAVOIE'S Roux made the Gumbo effortless and it turned out better than ever before. I definitely recommend this Roux - and will always use it in the future...

**Q: Is this Roux ready for to be used**
A: Yes, just scoop out a few tablespoons and add it to any broth to the desired strength. 

Here ya go..

Directions

Dissolve roux in water over medium heat and let boil for 30 minutes.
Add chicken, sliced sausage, tasso, and vegetables Bring to a boil..
Lower fire to a medium heat and cook until chicken and vegetables are tender (bout 1-1.5 hours)
Add remaining water and all ingredients except parsley and green onions.
Bring to boil, then reduce heat to simmer and cook until chicken is tender (about 1.5 hours).
Add green onions and parsley about 15 minutes before serving and Savoie's® Seasoning to your taste.
Serve over rice in soup bowls.

**Q: Does this need to be refrigerated after opening?**
A: Iput mine in the fridge once i open it.It is just flour and oil.

**Q: How long is it good after opened?**
A: The majority of the time the expiration is 2 years shelf life.This is just flour and oil cooked to browni it .I refrigerate it after opening.

**Q: I found this roux to be so difficult to stir.  Does anyone have any suggestions especially after being refrigerated?**
A: Add some liquid like beef broth

I was hesitant to go the non-traditional route and get a store-bought roux, but holy cow is it worth it. I will freely admit that this gave my gumbo better flavor that anything I've accomplished making it from scratch. And the leftovers just kept getting better and better! I recommend making this and then waiting until the next day to eat it (if you can resist the temptation). I will be using this for roux from now on. Great product.
