A great concept whose execution still needs a bit more love
I'm always looking for fast, versatile, low-carb and nutritious side dishes I can make when I need to whip up a quick, healthy, keto-friendly meal. I’m a big fan of many HighKey products and was really looking forward to trying their new instant cauliflower mash.I ordered the Asiago-Cheddar flavor, which tasted fairly good, but was less cheesy and more cauliflower-forward than I had hoped. Stirring in a spoonful of freshly grated Parmigiana Reggiano or Pecorino Romano added a welcome flavor boost. I'm guessing the cheddar-chipotle version might more flavorful, so I may give that one a try.I also had expected a smoother, creamier consistency, more like homemade, loaded cauliflower mash. Unfortunately, the prepared cauli mash mix was gritty rather than creamy and had a slightly gluey consistency (perhaps from the ground flax seeds?). The microwave preparation produced a better result (for me, at least) than pouring boiling water over the dry mix and butter (the so-called “stovetop instructions). Note to HighKey - most people use their microwave, not their stovetop, to boil a small amount of water, so I suggest renaming these two prep options “boiling water preparation method” and “microwave preparation method.”Creating a quick-to-prepare instant cauliflower mash mix is an inspired idea that, with this initial execution, isn’t yet living up to its enormous potential. I’d like to challenge the HighKey product team to experiment with tweaks to not only the ingredients and their proportions but also the preparation methods to improve the flavor and, more importantly, the consistency of the prepared cauliflower mash. Once they get the consistency right, the sky’s the limit! I'd love to see a broccoli-cheddar mash or, better yet, a roasted radish and roasted cauliflower mash (maybe with sour cream, bacon and cheddar. Yum!!!

Pretty good
This is the first I've heard of instant cauliflower mash. Preparation is comparable to making regular instant potatoes and seems to have a better texture when I add in some sour cream. I love this is lower carb but don't think I'd reorder often. This brand has cookies and brownies I get monthly.6/4/20 edit - I have found that this works best for me if I mix it with regular potato flakes. This makes the texture more familiar but still keeps the carb count lower than simply using potatoes. Since I'm not strict keto, I find this to be a good compromise. Otherwise, I'd suggest if you only want to use the cauliflower, this mix would work well for a "potato soup" recipe since it's not as thick as real mashed potatoes.

Good flavor and quick to fix
I bought this as an experiment. I've tried other Highkay products with much success and figured this would be a good bet. I really like them. It's a good introduction for people looking into switching to cauliflower substitutes. These don't have the cabbagey aftertaste of my homemade caulimash. I will buy these again.I think they're super useful in homes where only one or two people are attempting Keto diets, so when you need a quick substitute side dish to avoid the potatoes on the table, these whip up in 45 seconds.I don't know if it's the weather in my area right now, but I've had to add more water than suggested in the directions. That amount makes a dough which would probably be great as fritters. For a mashed potato texture, I add more water.

Taste is Good
I liked the taste of these. Although, I did find them to be kind of watery. If you follow the directions there's not much of a mashed potato like consistency. I would order again they are a quick easy side dish and the taste is good. I kind of get what other reviews are saying about the graininess. But it's instant powdered mashed cauliflower, can't expect too much IMO.

Great flavor, but runny.
I loved the flavor of the cauli mash, it was so delicious! The texture was a lot different than I expected though. Of course it's not going to be like actual mashed potatoes, but I followed the microwave directions and it was still very runny. I actually added a little bit more of the mix after letting it sit because it hadn't thickened up. This is a great keto alternative to mashed potatoes, but I'll have to play around with the water and mix ratios.

Seven portions at about $1.92 a serving
It's a small bag, but it is seven portions at about $1.92 per serving. The portion is about 1/3 cup prepared. It's a powder, and when made it is a thick batter consistency, sort of like a heavy pancake batter. The flavor is ok, it's not overly cauliflower or cheese, oddly the strongest flavor is onion. I didn't really like the texture but now that I am rereading this I think I might try to make them like potato pancakes, because pan fried and crispy might be amazing.

Gluten Free and tasty.
I am rather happy with this purchase, I wanted to try an alternative to mashed potatoes. This product hit the marker. I enjoyed the taste and texture, it's not the same, but it's very similar to regular mashed potatoes. I don't feel that heaviness that comes after eating the known starchy potatoes. If you want a side dish that it's rather tasty and gluten free alternative, don't hesitate and buy this product.

Decent for a first run at something Keto!
I bought this for my mom to try since she is interested in starting a Keto diet. She said the flavor was ok, a bit salty for her. She said adding veggies/meats to it might help it along. All in all though, she seemed satisfied with it.
