Jumbo Heavy Duty Commercial Dough Cutter/Bench Scraper 12-inch Stainless Steel Blade with White Polypropylene Handle

I have a new Blackstone griddle of 36" and needed a scraper to move food off the surface. This is a top that easily reaches 400 degrees so my weeny little scraper was unsatisfactory. At that heat my wrist watch starts to wilt. This mammoth scraper with handle is just the thing.The blade is wide, deep, and plenty sharp. The handle is durable plastic and textured so it doesn't get slippery. We're getting along just fine now. Yay.

This scraper just arrived, and I wish that I could keep it! Big, heavy and sharp, by golly, this baby will scrape and chop and help you grow stronger muscles at the same time! Beautiful craftmanship and 316 is food grade stainless, so I'm hoping the daughter who gets it uses it daily! And maybe I'll get one one day too!

Yes, it's more expensive than the hardware store versions of the scraper tool that some people say will do just fine for the task of dough handling. But, if you are on the fence, I would recommend buying the Bleteleh. I ordered a couple of hardware store-style scrapers, hoping they would be good enough to save me a few dollars vs. buying something like this made especially for baking. I tested them side by side, and afterwards, I just couldn't send the Bleteleh back. It kind of feels like using the All Clad equivalent of a bench scraper in terms of quality, lux, and the satisfaction of having the right tool for the job. In short, this is my new favourite thing for everything from wet dough handling to large meal prep (it's great for transporting large volumes of chopped vegetables, and also super handy for clearing a large chopping board in one swipe before the next task). I'd recommend taking a look at their 10 inch version as well - I ended up buying both as they have slightly different applications, and am glad I did.

I bought two of these. I frequently make ciabatta bread. I size the dough so it is 13" long and 7 1/2" wide, then I use one of these to cut the dough lengthwise. I could easily do that with a shorter dough cutter, but what I really need the length for is to slip a dough scraper under each side of the cut pieces so I can lift them without further disturbing and degassing the dough. Even though they are an inch shorter than the cut dough pieces, the extra half inch at each end is not a problem. With shorter dough scrapers, however, the dough will not lift without the ends folding over and ruining the ciabatta dough pieces. Works great.

I’m reviewing in terms of cake icing. I’m sure it makes a wonderful scrapper for what is intended for however, way too heavy for icing scraping on a cake but, glad I tried to see the difference.

Use this all the time for all the bread I'm making during shelter-in-place. I just wish the blade was an inch or two taller, but the large width is great. Would be perfect other than that!

This works like magic for the sourdough preshaping, especially high hydration! It’s well made, wide, sturdy, I recommend it!
