Turned out to be another good product by Yupik. It doesn't have much flavor, but that makes it versatile. Spelt is loaded with nutrition. I did find I liked them best if first rinsed then soaked overnight. That also made them faster to cook. The kernels were clean; there wasn't much dust at all. When I grind them into flour in my Blendtec there's moisture which I take to mean there's still life in the kernels. The bread I make tastes better than any other spelt flour I've used. The only thing is I guess because it's so fresh it doesn't hold a rise well.
