Ceylon Pure coconut flakes are made from fruits matured in the tree for more than 12 months. Once plucked, coconuts are aged for another month until the husks turn dark, the water inside the kernel is dried, and minerals are absorbed by the meat. We then dehusk the coconuts and crack the shells to remove the mineral rich, aged meat. Ceylon Pure coconut meat is then broken into pieces, shredded to a uniform size and dried to remove moisture to retain the best flavor that Ceylon coconuts are known for. This is ideal for use as a snack or to add natural and exotic taste of pure ceylon coconuts to your daily cooking.

Love the smell of Coconut
Smells wonderful and has been toasted for my Lemon Toasted Coconut Ice Cream. I've also used it in other recipes and it works with everything. Can't ask for much more than that.

Mislabeling
It says on the outside that it is coconut flakes and inside is shredded coconut - which I didn't want

Works well with Coconut "Sambol" and in salads with greens
It was fresh and "coconuty" than I thought, came out well in a Sambol and a salad...works better than frozen desiccated coconut - and app. it has no preservatives like sulfur...Sharing recipe for Spicy Coconut Sambol...if you want to try..1/2 pack of flakes½ cup chopped onion2 jalapeno chilies thinly sliced1 clove garlic sliced1 tomato sliced/chopped1 teaspoon dried red chili flakes1 teaspoon chili powder1 teaspoon salt1 teaspoon ground black pepper1 lime (juice)you can add half a cup of warm water or coconut milk if you want it a bit juicier....I put all in a food processor and blend well..can add more salt, pepper, and lime juice, to taste, while mixing well - I use hand!You can eat it with rice, bread, crackers or just by itself if you can handle the spice alone.
