Will this plate get hot enough to roast coffee with a Whirly Pot? I need at least 400 degrees.

No, it's not a coffee roaster. It has plastic & metal pieces & is a hot plate. It boils water, so it gets to 212-degrees, but 400 would melt it.

Will this burner work for cooking syrup for candies? I need to be able to reach 242 degrees sustained heat. Thank you.

I would say no. It is rated at 900 watts but from what I understand, it cycles off and on. If u need sustained heat, I don't think this is what u need. The customer service number is 1-800-334-0759. I would suggest u give them a call. They can give u the correct answer

Knob broke off...now what? Can't even see anything in the area onto which I can attach knob.

Contact the manufacturer to buy a new knob/thermostat, (which for liability reasons won't sell you one if you are not an 'authorized repair dealer') or pitch it and buy a new one. It will probably be cheaper and less aggravating to buy a new one.

This might be a dumb question but can you use canning pressure cooker on it?

No because both heat and heat stability are required - not to mention fuller coverage of the pressure cooker bottom. A single burner propane gas camp chef stove can work. Sadly, even the new electric ranges often lack an adequate btu/watt canning burner.
