My current knife set is sabbatier and still in daily use after 10 years and many sharpenings so that gives an indication of quality. One slight concern when cutting into starchy vegetables like potatoes, the knife is quite wide and the coating seems to make something of an air-lock with the vegetable pieces making it difficult to simply lift the knife out to move the vegetable pieces for the next cut. I’m not sure if the width / design of the blade or the coating cause this effect but it is something to watch out for.
