Review: You are missing out. - I am a highly reactive celiac with the tiniest amount of gluten. It’s medically severe issue. After hearing others say they can consume this without an issue. I was scared to death but I tried it! I can eat this flour with zero issues. I have not eaten a wheat flour in 30 years! You may be doing yourself a disservice to not try it. I have made two loaves this week! My bread is soft, fresh and delicious! Nothing like the dry sponge, tasteless and boring bread from the store.

**Q: is this fresh?   it could have been sitting on Amazon for  2 years.. is there and expiration date?**
A: If you purchase it from SimplyBeautiful, it is very fresh product.  Most of our stock has at least 6 months and usually 8-9 months left on the expiration date (which is very fresh).

**Q: How is the expiration date on the package set up relative to month and day? For example what is the expiration date of flour marked 1/11/2016?**
A: European Date format dd/mm/yyyy, so you're looking at November 1, 2016 if that's what your bag says.

**Q: This is 2 x 2.2 lb bags? The 4.09/lb is confusing.**

This bread flour is amazing. My pizza crust , with no change to the recipe, baked thicker and so much lighter. Cinnamon rolls texture was impressively improved, even though I thought my store bought bread flour was good. It’s worth the $.
