Boil 3-4 chicken breasts in water with 2 bay leaves and a few pepper corns. Prepare 2 boxes of rice according to directions on box, using chicken broth plus water, if needed. While rice is cooking, debone chicken and shred with fork. When rice is done, add chicken, and 1/2 to 3/4 c. sour cream to rice. Mix well. Layer casserole pan (9 x 13) with refried beans, then add rice mixture. Top with grated cheddar cheese, and heat until cheese is melted. Serve immediately. Put your own twist on it by adding black olives, chopped green onions, jalapenos, etc. Great with green salad.
