FINALLY A KNIFE MY HUSBAND DIDNT BREAK CUTTING CHEESE!!!
i PURCHASED THIS CHEESE KNIFE BECAUSE OF MY HUSBAND. HE HAS A HEAVY HAND WITH CHEESEAND HE WAS BREAKING MY OTHER CHEESE SPREADERS. SO FAR THIS ITEM IS REALLY WORKING.HE SEEMS VERY HAPPY WITH IT AND SO AM I. ITS NOT AN ITEM I WOULD GIVE AS A GIFT UNLESS ITWAS ALONG WITH SOME OTHER CHEESE ITEMS ONLY BECAUSE ALONE IT DOESNT APPEAR NICE ENOUGH.FOR A LONG TIME MARRIED PERSON WHO ENTERTAINED A LOT YES!!

Works, does not stick, you WILL use it!
* Updated 5 stars. I have been using this knife. It does better with certain cheeses and absolutely doesn't stick at all!OLD review->I guess I didn't see what the other reviewers saw. I also own a Cutco cheese knife and I got that other kind of well reviewed Cutco clone they sell here when I got this one. I'm basically cutting the block cheese from Costco. Cheddar. Monterey jack. That Jalapeno Jack stuff. So maybe this performs different with like some special kind of cheese. So I'll give it 4 stars because there's probably stuff out there I don't know about. But for your regular 2 lb 3 lb block cheese I get super nice straight lines using the other knives with less push.

I’ve found no good substitute for this knife
This large cheese knife is a very handy essential in my kitchen. I’ve been cooking for 60yrs. The larger size is more controllable than the small cheese knife. I cut hundreds of quarter inch cubes out of block cheese for my Ditalini macaroni salad I make all the time, very easy to control. Also excellent for halving hard boiled eggs and popping the yolks out with the tip for deviled eggs. Great knife for cutting up anything soft that might otherwise stick to a smooth blade like cake or brownies with thick icing, it’s a little pricey but well worth it.

Worked great until I tried to cut smoked gouda
I ordered this cheese knife and was really happy with it. It really works great for almost all kinds of cheeses.But there is a catch, there are *some* cheeses that it either 1) will not cut or 2) will cut but there is damage to the knife itself. I experienced both things when trying to cut smoked gouda. I would not even have attempted to cut it with this knife but it had worked well for everything else. Who knew? I did not. So I tried hard (and I have pretty good hand and arm strength from weight lifting) to cut that smoked gouda. I kind of succeeded, but the knife took on some significant damage. It did not break, but bits of it came off and it has never been the same since.So all I can say is this: this cheese knife works great except for really hard cheeses liked smoked gouda.

Great for Cutting 5lb Blocks of Mozzarella!
This is a great cheese knife!I don't know how well it does with hard cheeses like Parmesan or with anything with an extremely hard rind (the knife was originally designed to cut through blocks of Velveeta),but this plastic knife is a miracle for 5 lb blocks of mozzarella (I make deep dish pizza a lot)and does quick work of small blocks of cheddar and wedges of gouda.It slices through cheese like butter (also slices thru sticks of butter).The cheese does not stick to the knife like metal knives sometimes do.The blade can potentially warp and if it does, just run the side of the blade gently against a marble countertop or a flat surface, like a cutting board to bring the blade back to form.Whatever you do, DO NOT use a knife sharpener on this knife - you will damage the blade.TheCheeseKnife.com website says it's dishwasher safe, but trust me:Clean the knife by hand; DO NOT put it in the dishwasher.If you do warp or crack your cheese knife,the $20 price (approx.) makes it worth buying a 2nd one for a backup.

Incredible
This knife is incredible! Makes cutting cheese like cutting soft butter. My first knife was the smaller one intended to be used on cheese trays and I loved how it cut even though it wasn't the most attractive for a chess tray. When I saw. the larger one, I ordered it immediately. It is perfect for everyday use cutting cheese for grilled cheese, prepping sliced cheese ahead for cheese trays. It is unbelievably easy to have perfect slices. Did I mention that I LOVE it?

Wow!! I love this knife!! I used the smaller one at a friends house and had to buy my own. Unfortunately I read the reviews which directed me to buy the big one instead of the small one. In my opinion you need both. The big one is HUGE and would be great for a big party where you buy 7 blocks of cheese from Costco and have to cut them in to half inch squares. For a regular dinner party the small is perfectly adequate. You can't take the big knife out and hand it to a guest. It would be akward! Buy both.This thing cuts thick sharp cheeder blocks like butter. The way the blade is shaped it has multiple ridges which seem to allow air in while a regular knife allows no air and becomes more and more "stuck." This is the best way I can describe the way I understand how it works. Whatever it is, it's wonderful. I can remember cutting block after block for parties and my hand hurts SO bad while using my best knife. NO MORE!! NO MORE!

i have cut multiple types of cheeses with this knife so far - and i am blown away. I've done hard from the fridge alpine cheddars, as well as soft, smushy brie and both have cut like a dream and wiped clean with no issue. the cheese doesn't stick to this knife - and it feels impossible that this thin, dull knife would work, but i love it! wish it came in different colors or with a protective sleeve, but those are just add ons!
