These are really very good salt-preserved capers. The buds are not tiny, but small enough to be tight, which I think is a better texture than large buds which are generally softer. (Also I’ve found that large capers must soak much longer to bring down saltiness, and a long soak unfortunately soaks out flavor. These I cover with water a second or three and they’re fine.) The flavor is probably the best of the salted capers I’ve bought-quite fresh, a tiny bit floral. I’ll continue to buy this brand, but a bigger jar!

Nice size, great flavor, I prefer the texture of capers packed in salt vs brine, plus then I can use the salt when I want to add caper flavor without adding texture.
