A slightly acidic, not very sweet liquid made from the juice of green grapes, which never fully ripened enough for wine production. Verjus is used for deglazing, sauces and dressings, as an alternative to wine, vinegar and lemon juice when a milder flavor profile is desired. Not widely used since medieval and Renaissance times, verjus is now enjoying a comeback in many dishes. This verjus comes in bottles and is a bit less sweet than the jarred version with grapes.

What a waste
I opened the bottle and use a little amount. I placed the bottle in a cool, dark area for storage and the following week I went to use it and there was a nice gathering of mold in the neck of the bottle. I would like a return. I will than review the product and again and if it deserves a good rating, then so be it.
