I have a Kuhn Rikon pressure cooker which is great and cooks at 15 psi. This is more beautiful, has a broader base, and can be controlled with one hand. However, it only goes up to 10 psi. so some recipes will take longer and also it shouldn't be used for stock. However, it is a beautiful piece of equipment and...oh dear did I say this was beautiful and had a broad base and also mention controlling it with one hand? Haut cuisine is all very well but I've really got to get out more.
