Description
- The Caper is an evergreen shrub with shiny thick green leaves. It grows best in semiarid - arid climates but can grown in containers in other regions. This small bush has no problem with rocky, gravelly, or sandy soil. In the wild it can even be found growing in the crevices & cracks of walls. This tough plant can tolerate temps of over 105F (41C).
- "Capers" are the edible flower buds of the caper bush that have been pickled in salt. The buds are picked when they are dark green & the size of a corn kernel for pickling during which they develop the wonderful flavor they are known for.
- Capers are an ingredient in tartar sauce, pasta dishes such as chicken piccata & spaghetti alla puttanesca, salmon dishes such as lox & cream cheese, used in salads, & more. They are popular in Mediterranean & Italian cuisine, & becoming more so worldwide.
- If you choose not to harvest your flower buds for capers, you will be regarded with big beautiful flowers have a sweet fragrance. The fruit that replaces the flowers are called caper berries, & they also pickled & eaten.
