I picked this soy sauce after watching a YouTube video about the process of making soy sauce. Further reading revealed that the sauce in those plastic tear-open packets are only vaguely the same as traditional soy sauce like this. I knew this as the flavor in those packets was never that good, mostly salty. This is different. There's a smokiness and an almost buttery flavor that I don't have the words to describe, but which I found delicious. I added it to a sauce with ginger and garlic and a touch of sesame oil and immediately could taste the difference versus the bottle I usually pick up at the grocery store. Now I'm not saying that I'll stop using the grocery store soy sauce if I'm cooking something that calls for a good amount, but I feel like this is a nice extra touch for the table.

Best soy sauce I've found so far
07.24.2020: It's been a couple of months now and I've tried other brands. This is the best hands down. The difference is in how much salt you like to taste. Soy sauce is heavy on sodium, but I don't want my first taste to be overwhelmingly salty. This soy sauce is flavor first. Its great to cook with but pricy. But if you like good food, its worth it and a little goes a long way.I'm on a quest to find a soy sauce that tastes like the sauce my mother bought in the 1960s. This sauce comes very close and I'm happy with it, but I'm going to keep searching until I find the taste I remember from my teenage years.

Try this, and Kikkoman will never satisfy.
Steep price, but I'm not sure I can ever go back to common soy sauce again. This is amazing, and the common stuff is a cheap imitation. The depth and richness of flavor is outstanding. The image here shows it next to my 8 oz. coffee cup, just so that you're aware that it is not a big bottle. It's worth it to me. I sure won't waste any.

Delish!
A fantastic balance between flavour and value. The sauce is luscious with a great depth of the (possibly mythical) umami. The salty element is pronounced -- all soy sauces are salt-bombs -- but this one doesn't snack you in the face with it. What makes this amazing is the complexity, similar to many of the artisan sauces I've tried but at a fraction of the price. Overall, a great buy.Why not five stars? I save that for perfection. This is merely superb.

Most beautiful flavor
Some would say all soy sauce tastes the same, I am not one of those people. This is so delicate, yet bursting with flavor. Salty yet not too salty. I bring it to sushi places, so I know I can have excellent soy sauce.

For Sushi Lovers
This is more than 5 stars, this stuff is a new world. We found it from show Jiro Dreams of Sushi. I won't even try to explain the difference - watch the show. It's expensive per oz but you actually use less of it. Sit at the sushi bar, place this bottle on the table, and all of the sudden the sushi chef takes you alot more seriously.

Thick paste in foil
This came as a thick paste in foil packets -- although the paste does taste like delicious soy sauce. I am confused because it's not what's pictures or what I expected, but not completely disappointed, since it's tasty.

And now I understand the difference.
Slightly more viscosity than what we usually encounter on our table at the restaurant, and the flavor is amazingly better. The flavor difference is subtle, but significant.Highly recommended, especially for those who use soy sauce with their sushi or sashimi.
