We are a family farm that produces almonds, pistachios, organic vegetables, raisins and field crops in Fresno County. Until a few years ago, we sold all of what we produced to processors, who sold to brokers, who sold to "re-baggers," who sold to retail outlets, who sold to you. We realized there are very few options available to consumers who want to know where their farm grown foods come from and decided to do something about that. Our almonds are grown in Central California and packaged at our Food-Safe Certified facility in Tranquillity. This is the Story of Our Amonds... The Almond Crop Begins in the Spring Every February, the orchards turn snow-white with flowers. These are the blooms that are pollinated by honeybees and grow into almonds. For six months the trees harvest energy from the sun and take up nutrients from the soil and pump them into the small nut. By August the nuts are fully mature and will be harvested. Their time under the Califronia sun will end and they will begin their journey to healthy homes. We Bring the Almonds to our Facility in Tranquillity, California After the outer hull and shell is removed the almonds are brought to our facility in plastic lined wooden bins. Here they are sized, sorted and stored. Just before they are packaged, they are sent to be steam-pasteurized where hot steam is used to briefly increase the temperature of the skin to kill any pathogens that may be present. (special thanks to my daughter Courtney, who was kind enough to add flair to this picture) Finally... The Almonds are Packaged for Delivery The last thing we do to the almonds before leaving the farm is packaging. We are a GFSI Certified, Food Safe Facility and are very serious about the quality of the Almonds we pack. Here, the almonds go through a final sorting stage and are weighed, packed, palletized, and ready for sale. These almonds are grown a couple miles from where I process, store and package them. I ship directly from my farm facility to amazon who distributes around the U.S. I don't know of any other almonds available on Amazon or anywhere else that delivers direct from the farm. I've never received poor feedback due to quality and am thinking something else may be going on. Please PM me so we can get this figured out. I am not sure what is the pasteurizing process, it may steam them very quickly without cooking them.
